Great Hot Sauce

15 Sep 2003 by Jason Fried

I’m a bit of a hot sauce connoisseur (or at least I think I am). This weekend I discovered a new favorite — Cafe Louisiane. The key seems to be the inclusion of the following ingredients: Cinnamon, Cloves, Allspice. The flavors and the heat are perfect together. Got any other hot sauce favorites?

The "Blazin'" wing sauce at Buffalo Wild Wings is great, but nothing beats the coma-inducing kick of the Blair's line of hot sauces, especially the Mega Death Sauce!

Dave's Ultimate Insanity Sauce is...um...insane.

Where did you discover it, JF?

Found this gem last night:

Some of these will likely kill you.

Rat, I found the sauce at Cold Comfort on North Ave. Fat Willy's Rib Shack -- never been, but I'll definitely be checking that one out!!

If I didn't have a 3-egg bacon/cheese omelette in my belly right now, I'd certainly be headin' downtown for some Fat Willy ribs. ;)

The best sauce I've ever had was the hot wing sauce at The Vine in Iowa City. If you're ever at the U of I, stop on in.

Tons of hot sauce reviews.

This really strikes me as odd, americans tend to like aged salsas with vinegar, (Tabasco style) and most mexicans despise this type of salsas. Salsas should be like ketchup: adding flavor but not destroying the original one.

If you ever come to Mexico try finding Habaneros (they're sold in supermarkets), toast them and then chop them with violet onions and add a little bit of vinnegar. Hmmm... very hot and tasty.

Also, the "hot sauce reviews" lists Salsa Valentina as something you can pour on anything. Hell no! Valentina is just for fruit or french fries and chips. And the thing is awfully cheap, cheaper than bottled water (about $0.30 US for a 250ml bottle).

Melinda's line of habanero-based sauces are great. Their chipotle is very nice, also.

As far as Tabasco-based sauces, this Louisiana boy digs Crystal.

Oh good, I'm not the only one...I put that stuff on everything.

I use Crystal for my everyday hot sauce. Excellent versatile sauce.

I'm also quite fond of the red pasty sauce whose name escapes me; it has Chinese and Thai writing all over it.

Mmmm...are you talking about the sweet and spicy one? I think it's called nuoc cham. Most bottles simply say "Sweet Chilli Sauce." That's good stuff, too, especially over rice and chicken.

Yeah, well of course you left-wing, Socialist ... oh ... wait ... wrong thread.

I *love* hot sauce, but many times it banned from our table. My wife (trained chef) says that I may *not* season the food on the table; it's an insult to the chef (which is a point I can see).

*sigh* ... but when my son and I cook up some grilled burritos, you can bet Dave's Insanity Sauce is on the table.

the great thing about coming from an east-indian family is that some type of hot sauce or chutney is a basic part of every meal - even breakfast.

anything that has a good amount of habanero peppers in it is great for the truly adventurous, but for those looking for a tasty hot sauce with just the right amount of kick, nando's chicken restaurants sells their peri-peri pepper sauces in grocery stores now across the uk, usa, australia, new zealand, and canada.

one of my favourites is pickapeppa - not the regular sauce, but the hot pepper sauce. it has a really unique taste, sweet and smoky but with plenty of bite.

If One of Several Steves is thinking of the same sauce that I'm thinking of, then he's not thinking of sweet chili sauce. The stuff that I have comes in a big ol' clear squeeze bottle with a green cap, and it has white writing all over it (Chinese?), and the sauce is BRIGHT red and VERY hot and not very sweet (if at all).

I love that stuff....

Ah...always a favorite. It's called:
Huy Fong Siracha Chili Sauce and it has a rooster on the label. It's fantastic on eggs.

Yes, Siracha! That's the one I was thinking of. And, you're right Jay, it's not sweet at all.

anything by rick bayless at Frontera Kitchens. Rick has that show on PBS, Mexico: One Plate at a Time. His salsas/sauces are available at Whole Foods and I think i've seen them at williams sonoma as well, under the Topolo brand. They're authentic, rustic Mexican sauces particularly sublime for cooking, with tons of flavor as well as heat. I recommend anything with Guajillo chiles or Chipotles.
